How to make the perfect banana bread



Ingredients:

  • Banana–3 (well ripe)
  • Self-rising flour –1 ½ cups
  • Sugar –½ cup
  • Baking soda –1 teaspoon
  • Eggs –2
  • Sunflower oil– ½ cup

Cooking Instructions:

  1. Take bananas, remove skin and place in a bowl, mash with hands to a smooth paste.
  2.  Beat the eggs with whisk for a minute, add oil to it and whisk for another minute.
  3.  Sift together self-rising flour and baking soda.
  4. Add to this sugar, mashed bananas, beaten egg mixture and mix well until smooth consistency.
  5.  Grease the ring tin and base  with oil and pour the mixture onto it.
  6.  Bake for 150⁰ C for approximately 35 minutes (mine got done in 33 mins exact) or until inserted toothpick comes out clean.
  7. Allow cooling and cut into slices.

Healthy Beef Source

INGREDIENTS

1 kilo of beef cut into chunks

1/8 kilo of pork fat cut into strips

4 onions, peeled and quartered
5 medium potatoes, quartered (optional: fried)
1 medium sized carrot, sliced in 1/2" sections
2 red bell pepper, sliced
2 cups beef stock or 2 bouillon cubes dissolved in water
3 bay leaves (laurel leaves)
1/4 -cup vinegar
2 cups tomato sauce or 1/2 cup tomato paste
1 cup soy sauce
salt & pepper to taste

DIRECTIONS



  1. Cut an incision on the beef chunks and insert a pork strip in the middle (mitsa)
  2. In a casserole, combine the beef (with the fat), tomato sauce, soy sauce, bay leaves and beef stock. Bring to a boil and simmer until the beef is almost tender
  3. Add the vinegar and let boil for a minute or two
  4. Add the potatoes, onions, carrot, and bell pepper
  5. Let simmer until potatoes and carrots are cooked - occasionally stir to thicken sauce
  6. Serve hot with white rice

Simple but healthy Cheese cake

Simple  healthy Cheese Cake


Ingredients
(A)
500g Cream Cheese
300ml UHT Milk
(B)
120g Corn Flour
10 Egg Yolks
1tsp vanilla essence
(C)
10 Egg Whites
2tsp Cream Of Tartar
180g Caster Sugar
(D)
120g unsalted butter, melted
Method
1. Boil (A), stir and cook until smooth in low fire, let it cool.
2. Mix (B) before stir into cheese mixture.
3. Whip up (C) until stiff (Medium speed, 10mins).
4. Fold in egg white mixture with cheese mixture, add in melted butter. Mix well.
5. Pour into 8 inch square pan.
6. Bake in water bath at 150C for 50-60mins or until cook.
7. 2 ways to serve – (serve immediately, texture will be fluffy or put into the fridge to chilled.

Easy Garlic Fried Rice

Easy Garlic Fried Rice
INGREDIENTS:
Day-old rice (refrigerated left-over rice)
2 Tablespoons Olive oil (light)
A few crushed garlic (3-5)
1-2 Tablespoons Soy Sauce, or to taste
Dash of salt, or to taste
2 Eggs, beaten
Handful frozen Peas and Corn
INSTRUCTIONS:
Heat about a 1-2 Tablespoon oil in a pan or wok. Saute the garlic until aromatic. Don't let the garlic burn.
Add the cold rice and stir to break the grains apart. Cook until warmed up. Season with a little salt. Add the soy sauce and mix with the rice until most of the grains are coated.
You may scramble the eggs in another pan and just add it later after it's been cooked. But if you have a big enough wok or wide enough pan, create a well/space in the middle of it by pushing the rice to the side. Spray a little oil in the middle and then pour the beaten egg.
Let it set. When the eggs have set enough, flip it over then begin to mix it with the rice breaking it up as you do so. Thereafter, add the frozen peas and corn and continue to stir until the veggies are cooked about 2-3 mins. Season the rice with more soy sauce or salt as needed.
Serve immediately. Easy-peasy delicious!

Easy to try pineapple cake

INGREDIENTS:
2 cups (10 ounces) all purpose flour
2 tablespoons cornstarch
1 teaspoon baking powder
¼ teaspoon kosher salt
zest of 1 lemon
7 ounces unsalted butter, room temperature
¾ cup granulated sugar
4 large eggs
1 20-ounce can crushed pineapple (do not drain - see note)
1 teaspoon pure vanilla extract
optional: fresh whipped cream for serving
INSTRUCTIONS:
Preheat the oven to 350 degrees. Grease an 8-inch or 9-inch round cake pan and line it with parchment paper (note: the 8-inch pan cuts it a bit close with the batter when the cake rises in the oven but won't spill over). Place the cake pan on a baking sheet.
In a medium bowl, whisk together the flour, cornstarch, baking powder, kosher salt and lemon zest (make sure the zest doesn't clump together). Set aside.
In a stand mixer fitted with the paddle attachment, cream the butter and sugar together for several minutes until light and fluffy (first on low speed and then gradually increasing the speed to medium high). Turn off the mixer and scrape down the sides of the bowl with a spatula.
Turn the mixer back on low speed and add the eggs, one at a time, scraping down the bowl after the second egg. Allow the eggs to incorporate completely and then scrape down the bowl again. This is a lot of eggs so don't worry if the mixture starts to break. The next step will bring it back together.
Add the crushed pineapple along with the vanilla and mix briefly on medium low to combine. With the mixer on low, add the flour mixture in 3 batches and mix until just combined. Turn off the stand mixer and scrape down the bowl with a spatula, giving the batter one final stir.
Pour the batter into the prepared cake pan and use a spatula to level off the top.
Bake for 50-60 minutes, or until a toothpick comes out clean. Allow to cool for at least 15 minutes before removing the cake from the pan. Serve plain or with freshly whipped cream.
Notes:
If you have sliced pineapple or pineapple chunks (the canned variety), you can make crushed pineapple by pulsing it in a food processor until it's broken down. You want pineapple canned in juice, not in syrup.
Don't drain the canned pineapple. You want all of the pineapple juice in the cake for both flavor and moisture.

Super healthy shrimps


INGREDIENTS:
For the salt and pepper mixture:
2 parts whole peppercorns
1 part sea salt
For the rest of the dish:
1 pound large shrimp, shells on and deveined (with or without heads)
3 tablespoons potato starch or cornstarch
1/3 cup oil for shallow frying
salt and pepper mixture, to taste
6 cloves garlic, finely chopped
1 long hot green or red pepper, thinly sliced
1 scallion, chopped
INSTRUCTIONS:
To make the salt and pepper mixture:
In a small pot over medium low heat, dry roast the whole peppercorns of your choice for 15 minutes, until very fragrant. Take care not to burn them, adjusting the heat as needed. Cool completely and use a spice grinder or mortar and pestle to grind the peppercorns down to a powder.
In the same pot over medium heat, dry roast the salt until it turns slightly yellow in color. Let it cool and combine it with the ground pepper. You now have your own authentic salt and pepper powder, which you can use in whatever “salt and pepper” dish you like.
To prepare the dish:
Rinse the shrimp and pat them thoroughly dry with a paper towel. Dredge them in potato starch or cornstarch––whatever you’re using.
Heat the oil in a small cast iron skillet to 375 degrees. Quickly lay the shrimp in the oil with about an inch of space in between each shrimp, and fry the shrimp in batches, cooking each side for 30 seconds. Set aside on a paper towel-lined plate, and sprinkle with salt and pepper powder to taste.
In the wok, heat 2 tablespoons of oil over medium heat. Fry the garlic until just golden brown (careful not to burn it), and set aside to drain on a paper towel lined plate.
Remove any excess oil from the wok, so there's only a tablespoon or so left (you don’t want to use too much oil at this stage, as this is a “dry” dish). Add the peppers to the wok. Turn off the heat, and add the garlic back to the wok, stir-frying everything together for a minute. Add the shrimp to the wok, and gently toss everything for 10 seconds, sprinkling over a bit more of your salt and pepper .

Hi guys today I'm going to share a healthy and tasty recipe for Jollof rice. there has been and i guess will always be an argument between who's Jollof tastes better in Africa especially between Ghanaian  and Nigerian.  i have tried both and i will without a bias that Ghanaian Jollof wins in my humble opinion. lemme know what you think in the comment section.
lets take a look at the recipe for cooking a delicious and health Jollof.

The secret to a tasty Jollof is  a good stew or gravy. lets walk you through the process and ingredients 

Ingredients

Steaming of Beef /Chicken
Beef / Chicken
1/2-1 pound boneless beef or chicken 
3 cloves garlic
1 inch ginger
1/2 green bell pepper
scotch bonnet pepper as required (optional)
1/2 onion
salt as required.
Add desired herbal spices 

Stew
1/2 cup/120ml oil
3 tablespoon tomato paste/ puree
2 large onion
pepper as required
2 large tomatoes chopped
1/2 teaspoon curry powder
1 bay leaf
1/2 teaspoon of nutmeg
3 spoons of shrimp powder 
3 spoons of Dry fish powder(Amane)
1/2 teaspoon of Rosemary 

Jollof
2 cups rice
1 1/2 - 2cups water adjust with the brand used
salt as required  

Instructions
Prepare Beef/Chicken
Wash and Cut the Beef / Chicken into desired sizes. Blend all the ingredients under the 
Steaming of Beef /Chicken  together. 
Pour over the Beef / chicken.  Put on high heat and cook till is tender. Remove from cooker and pour into a sieve, drain stock for later use. 

To make the stew
Blend onions,  garlic and pepper together, set aside. Put oil in a saucepan and set on fire. 
When oil is hot, add some sliced onions to spice the oil then  fry beef/chicken and set aside.
Add tomato paste, stir fry for about two minutes, add blended onions, pepper, garlic.
 Add chopped tomatoes and stir fry. Add salt,Shrimp and fish Powder. 
curry and bay leaf, nutmeg, rosemary.   Cover and let simmer on high heat for about five minutes.

To make jollof
Wash rice till water is cleared. Add washed rice to the stew, leftover beef stock from the cooked beef/chicken , water as needed,  check and adjust for salt.
Cover tightly and bring to boil. Immediately it starts boiling, remove lid, using a thin wooden ladle or a long fork stir from bottom to top. Cover tightly and let simmer on low heat for 10-12 minutes. After the time has lapsed, remove lid, stir again. Stir in beef at this point. 
Cover tightly and let simmer for 10 more minutes till its well cooked.you can add vegetables and serve with shito or green pepper sauce.
